Chocolate Cookies
I do not like the cookies alone, so I made some buttermilk biscuits filled with chocolate. It is my contribution the event All cook gluten-free, thanks for accepting my proposal of the theme for the event. I have not had time to put it without Thermomix, promise this right out for a while.
Ingredients:
- 100 g of sugar
- 300 g of gluten-free baking flour (I used Dolci Schar Mix)
- 130 g of butter soy or vegetable shortening at room temperature
- 1 egg
For chocolate:
- 150 g of pure cocoa powder 50g
- water 50 g butter or soy margarine
With Thermomix : get all ingredients in the glass 20 seconds at speed 6. Remove dough and store it in a transparent film in the fridge for half an hour. Once relaxed, leaving the stretch a bit thick (they grow a little baking but very little but it should not leave too thick). Cut dough with cookie cutters or molds and decorate them. We must make an even number. Place on a tray upon which will foil. Beat the egg and a basting brush paint the cookies. The go into the oven over medium-high or preheat to 180 º up and down. When we get cookies just below the oven and bake for 15 minutes. The remove from the oven and let cool on parchment paper. Once they are cold prepare the chocolate. Coverage chocolate (Thermomix): put in the cup cocoa and water 4 minutes, 37 º, Speed \u200b\u200b2. Add the butter another 4 minutes, 37 º, Speed \u200b\u200b2. We found that the mixture is homogeneous. Immediately before it gets cold, we about half of the cookies turn given some chocolate and cover with the other half to make "sandwiches" of chocolate. In the end, we take a few threads of chocolate over cookies to decorate. Taste and appearance are very rich but are a bit chalky consistency and fragile, to see if someone gives me a trick for improvement.
