Botillo

Although I live in Madrid, I'm from the great county of El Bierzo. Thanks to HEMC 28 I had the perfect excuse to post the recipe for Botillo, typical dish of Bembridge and revered by all who try it. Botillo is basically the ribs and pickled pig's tail and entripados that crashes and healing for eight days and then cook it with cabbage or cabbage and potatoes. In the recipe I will tell you how to do it from the beginning, my parents are what make the first part of entripar and heal and give it to me and ready to cook, I'd do without them. Well, I start to see if you like.

hemc 28 - matanza

Ingredients:

  • 1 kg to 1.5 kg of pork ribs and tail chopped
  • 18 g of salt per kg of meat
  • paprika 23 g per kg of meat (see the brand or the ingredients to assure it does not contain gluten)
  • 2 or 3 cloves of garlic per kg of meat
  • a pinch of oregano
  • a glass of water for every kg of meat
  • 1
  • blind gut
  • 4 or 5 potatoes
  • medium cabbage or cabbage 1
Preparation of botillo:
Mix all the marinade ingredients, salt, paprika, chopped garlic, oregano, glass of water and meat. Allow meat to marinate for two days, stirring once a day. At the same time, clean the gut blind and gets soaked with water and vinegar for two days. The casing is clean and change the water and vinegar once a day.

Once past these two days, drain well the gut and gets into it the marinated meat, pressing it so that no air inside. Tied and hung in a place with no humidity and no heat for 8 days. We must make the wineskins, like sausages, preferably in frost days to cure the meat. You could also make a fire to help in healing 2 or 3 times in eight days. After eight days after you can cook.

botillo Preparation:
botillo Puts in a pot large enough (it has to fit the botillo, vegetables and potatoes) and covered with water. Catching fire and cook for one hour per kg weight of botillo. When I left an hour of cooking, the pot is poured into the cabbage or cabbage, washed and cut into chunks. When it is 1 / 2 hour, thrown into the pot the potatoes peeled and cut into large right. At the end of cooking time, take it out botillo to a plate and a knife to open the casing and removed all the meat inside. Take out the vegetables and potatoes are served as accompaniment. Just an advice but is much richer with a good wine from El Bierzo. Take advantage!

Where To Find Bandanas By Manasquan Nj

gluten and lactose free muffins gluten and lactose

Cupcakes

I tried to make cupcakes not know the time and never came out as I wanted . In the end, a bit of this recipe, some of that and I have gone about it until my husband's family has been compared with those of Aunt Julia, who has been making traditional muffins life, which is, of course, an honor for me. See if you like.

Ingredients:

  • 200 g of gluten flour (I used Mix Dolci of Schar )
  • 125 g olive oil
  • 150 g sugar 3 eggs
  • 1 on gluten-free yeast (I use that of Squire, can be replaced by a double envelope of leavening, although it is more spongy with yeast)
Preparation:
With Thermomix : The eggs and blanched sugar , 5 minutes, 37 º, Speed \u200b\u200b3 1 / 2. Add the oil, 5 seconds, temperature, speed 4. Add the sifted flour and baking powder, mix 15 seconds on speed 8.

Without Thermomix: Mix eggs and sugar with a whisk until it becomes a compact mass, add oil and stir again. Add the sifted flour and baking powder and stir until well blended.

From here is the same with or without Thermomix : We put the mixture in the refrigerator at least 1 / 2 hour (this is to rise more easily , a trick that I thank Marisa ). Preheat oven to 200 º up and down and once the temperature has taken it down to 180 º, just below 20 minutes. Fill the paper cups half and we put in the oven. To help raise and so it will not browned too below is best to use molds ( custard cups or molds for cupcakes) or special trays that come with holes for the cupcakes (this is what I've used .)

Cod llauna gluten and lactose

Cod llauna

had long wanted to do something with the whole process cod, desalted included and found this recipe that was great. The only ingredient that can present problems is the paprika. You can do without it or you can check to see which brands can be used. I prefer not to brands because they can change, if anyone needs it just has to ask. Cornstarch can be found in any supermarket, is the normal fine corn flour.

Ingredients (4 people):
  • 4 desalted cod loins
  • paprika 2 tablespoons gluten-free (check the ingredients, but also can be done without paprika )
  • 60 ml olive oil
  • 2 cloves garlic
  • gluten-free flour or cornstarch
Preparation:
cod is desalted water by putting it in two days complete and changing the water every 12 hours. We can also buy frozen desalted, in this case simply thaw.

Once desalted or thawed, dried, flour gluten-free flour or cornstarch and fry gently in hot olive oil.

Preheat oven to 180 degrees and place the cod in a tray or ovenproof source, sprinkle with paprika and finely chopped garlic cloves, sprinkle with olive oil and placed in the oven. Leave in the oven for about ten minutes and you're ready.
