Botillo
Although I live in Madrid, I'm from the great county of El Bierzo. Thanks to HEMC 28 I had the perfect excuse to post the recipe for Botillo, typical dish of Bembridge and revered by all who try it. Botillo is basically the ribs and pickled pig's tail and entripados that crashes and healing for eight days and then cook it with cabbage or cabbage and potatoes. In the recipe I will tell you how to do it from the beginning, my parents are what make the first part of entripar and heal and give it to me and ready to cook, I'd do without them. Ingredients:
- 1 kg to 1.5 kg of pork ribs and tail chopped
- 18 g of salt per kg of meat
- paprika 23 g per kg of meat (see the brand or the ingredients to assure it does not contain gluten)
- 2 or 3 cloves of garlic per kg of meat
- a pinch of oregano
- a glass of water for every kg of meat
- 1 blind gut
- 4 or 5 potatoes
- medium cabbage or cabbage 1
Once past these two days, drain well the gut and gets into it the marinated meat, pressing it so that no air inside. Tied and hung in a place with no humidity and no heat for 8 days. We must make the wineskins, like sausages, preferably in frost days to cure the meat. You could also make a fire to help in healing 2 or 3 times in eight days. After eight days after you can cook.
